🥤 Nigerian-Style Tamarind, Ginger & Pineapple Drink
Makes: About 2 litres
Ingredients
- 250 g tamarind
- 1 medium ripe pineapple
- 1 medium piece fresh ginger
- 6–8 cloves
- 2 litres clean water
- Sugar, honey or dates to taste — optional
- Ice cubes — optional
Method
1. Prepare the tamarind
Remove the shells and loose fibres from the tamarind. Put the pulp in a large bowl.
2. Soak
Add about 1 litre of warm water and leave it for 30–60 minutes.
3. Extract the tamarind
Mash and squeeze the soaked tamarind thoroughly with clean hands to release the pulp and flavour.
4. Prepare the pineapple and ginger
Peel and chop the pineapple. Peel and roughly chop the ginger.
5. Blend
Blend the pineapple and ginger with about 500 ml of water until smooth.
6. Combine
Strain the pineapple-ginger mixture into the tamarind mixture.
7. Add the cloves
Add the cloves and the remaining water. Stir well and allow everything to sit for 30–60 minutes so the flavours can develop.
8. Strain again
Pass the drink through a fine sieve or clean cheesecloth to remove the tamarind fibres, pineapple pulp and cloves.
9. Sweeten
Taste it first. If it’s too sour, add a little sugar, honey or blended dates.
10. Chill and serve
Refrigerate for a few hours or serve over ice.
⭐ For a richer Nigerian flavour
You can add a small piece of uda (Negro pepper) or a little more ginger. However, don’t overdo the spices because the tamarind and pineapple already have strong flavours.
Storage: Keep it refrigerated in a clean, covered bottle and preferably consume within 2–3 days. Shake well before serving because some natural pulp may settle at the bottom.

One important point: many claimed benefits of tamarind—such as lowering blood pressure, treating infections or causing significant weight loss—are not established well enough to consider tamarind drink a treatment for those conditions.
