[FOODIES CORNER] How to make Nigerian yam porridge (Asaro)

16

Yam porridge, popularly known as Asaro, is a delicious Nigerian dish made with yam cooked in a well-seasoned pepper mixture until soft, creamy and fluffy. It is easy to prepare and makes a satisfying meal for lunch or dinner.

Although Asaro is particularly popular in south-western Nigeria, especially among the Yoruba, it is enjoyed across the country, with different regions adding their own ingredients and cooking methods.

One popular variation is Asaro elepo rederedere, which refers to yam porridge prepared with a generous amount of red palm oil, giving it a rich colour and flavour.

Yam porridge can be prepared with or without vegetables, depending on personal preference. Adding pumpkin leaves or scent leaves enhances its flavour and nutritional value. You can also serve it with your preferred protein for a more filling meal.

Ingredients for Yam Porridge

To prepare a delicious pot of Nigerian yam porridge, you will need the following ingredients:

  • White yam
  • Red palm oil
  • Deboned smoked fish
  • Dried fish
  • Ground crayfish
  • Onion
  • Fresh vegetables, such as pumpkin leaves or scent leaves
  • Roughly blended bell peppers
  • Roughly blended scotch bonnet peppers
  • Salt to taste
  • Seasoning cubes to taste
  • Water

How to Prepare Yam Porridge

Step 1: Peel and cut the yam

Peel the yam and cut it into medium-sized chunks. Rinse thoroughly with clean water to remove dirt and excess starch, then set aside.

Step 2: Cook the yam

Place the yam chunks in a pot and add enough water to cook them. Cover the pot and cook over medium to high heat for about 10 minutes.

Step 3: Add the ingredients

Add the roughly blended bell peppers and scotch bonnet peppers, chopped onion, salt, seasoning cubes, ground crayfish, smoked fish, dried fish and red palm oil.

Stir gently to distribute the ingredients evenly, then cover the pot and continue cooking until the yam becomes soft and thoroughly cooked.

Step 4: Mash the yam

Use a wooden spoon or spatula to mash some of the yam chunks to your preferred consistency. You can leave some pieces whole if you prefer a porridge with more texture.

If the mixture becomes too thick before the yam is fully cooked, add a little water and allow it to simmer.

Step 5: Add the vegetables

Wash and chop your preferred fresh vegetables, such as pumpkin leaves or scent leaves. Stir them into the porridge and allow it to simmer for another three to five minutes.

Taste and adjust the seasoning if necessary, then turn off the heat.

How to Serve Yam Porridge

Serve the yam porridge hot as a standalone meal or alongside fried plantain, beef or your preferred protein. You can also serve it with fried stew for an extra burst of flavour.

Whether prepared for a family lunch or a special occasion, Nigerian yam porridge is a simple, flavourful and satisfying dish that can be adapted to suit different tastes.
