Coconut rice is a fantastic dish that adds a tropical twist to traditional rice recipes. Coconut milk can indeed transform the flavor and aroma of rice, giving it a rich and delicious taste.
It’s great to know that the only difference between this coconut rice and the usual jollof rice is the use of coconut milk.
The slight change in color is a small trade-off for the wonderful taste and aroma it brings.
COOKING INGREDIENTS
Coconut milk
Rice
Fresh ground tomatoes
Tomato paste
Sliced onions
Seasoning cubes
Vegetable oil
Ground ginger
Ground garlic
Salt and pepper
COOKING INSTRUCTIONS
Set your cooking pot on heat, add a half-cup (150ml) of vegetable oil, allow heating for at least 90 seconds before adding the tomatoes.
Now fry and stir the tomatoes for the next 10-15 minutes till it dries.
Add the chicken stock once you are done with frying the tomatoes, also add the coconut milk.
Add a seasoning cube, add more salt to taste. Allow boiling before adding the rice, then the remaining half cup of sliced onions.
Cook for the next twenty to forty minutes until the rice is easy to chew.
You can add a little more water along the line. once it gets soft, turn, and serve.
Serve with any protein of your choice, salad, or plantain.
