[FOODIES CORNER] Basic recipe and cooking instructions for Gizdodo

Gizdodo is a popular Nigerian dish that combines gizzards (chicken or turkey) and ripe plantains in a flavorful tomato and bell pepper sauce.

This recipe is great for mid-week,  weekend dinner or even lunch because it’s so straightforward and of course tasty.

Gizdodo can be served as a course meal or a side dish Nigeria. Usually, it works best with jollof rice. Below is the recipe for Gizdodo.

COOKING INGREDIENTS

Chicken or turkey gizzards, cleaned and chopped
Ripe plantains, peeled and cut into cubes
Bell peppers (red and green), diced
Onion, chopped
Cloves of garlic, minced
Tomato paste
Chicken broth
Vegetable oil
Thyme
Curry powder
Seasoning cubes
Salt and pepper to taste
Fresh parsley (for garnish)

COOKING INSTRUCTIONS

In a large pot or saucepan, heat the vegetable oil over medium heat.

Add the chopped onions and minced garlic. Sauté until the onions are translucent.

Add the chopped gizzards to the pot and sauté for a few minutes until they start to brown.

Season with salt, pepper, thyme and curry powder. Stir to coat the gizzards with the spices.

Stir in the tomato paste and cook for another 2-3 minutes, allowing it to combine with the gizzards.

Add the diced bell peppers to the pot and continue to cook for a few minutes until they soften slightly.

Pour in the chicken broth and add the bouillon cube (if using) for extra flavor. Stir well to combine all the ingredients.

Reduce the heat to low, cover the pot, and let the gizzards simmer for about 30-40 minutes or until they become tender.

If needed, add more water or broth during cooking to maintain the desired consistency of the sauce.

While the gizzards are cooking, heat a separate pan with a little oil over medium heat.

Add the cubed plantains and fry until they turn golden brown on all sides.

Remove the fried plantains from the pan and set them aside.

Once the gizzards are tender, add the fried plantains to the pot and gently stir to combine.

Allow them to simmer together for an additional 5 minutes to infuse the flavors.

Taste the sauce and adjust the seasoning if needed.

Remove the pot from the heat and garnish with fresh parsley.

Your delicious Gizdodo is ready to be served! It can be enjoyed as a main dish or as a side dish with white rice, Jollof rice or fried rice.
