[FOODIES CORNER] How to make Frejon this Easter

Frejon is the west african way of celebrating good friday/ easter. West africans have brown beans or black eyed peas with a fish sauce and the popular fermented cassava grains called garri sprinkled over it.

Ingredients

  • 1/2 cupBrown beans or Black Eyed Peas
  • 1 cupCoconut milk
  • 1/4 teaspoonSugar
  • 1/4 teaspoonGinger
  • 1/4 teaspoonMinced Garlic
  • 1Small bulb Onion (cut into rings)
  • 2Scotch Bonnet Peppers (Chopped)
  • 1Roma Tomato
  • 3 tablespoonCrushed Tomatoes
  • 1 handfulChopped Spring Onions
  • 1can Sardines
  • 1 handfulGarri
  • 2Bouillon Cubes
  • Salt to Taste (optional)

Directions

  • Step 1

    In a pot, place your washed beans and 1/2 cup of coconut milk and bring to boil on medium heat. Add 3 cups of water to the beans so it boils till it’s very soft, almost a mushy texture.

  • Step 2

    Once the beans is soft, blend it with the rest of the coconut milk and return to the pot to continue cooking. Season with sugar and 1 bouillon cube.

  • Step 3

    Open your sardine and drain the oil into a separate pan, fry the onions, spring onions, pepper, tomato and blended tomatoes.

  • Step 4

    Season with the garlic, ginger and seasoning cube.

  • Step 5

    Pour in your sardine and stir.

  • Step 6

    Serve the frejon with the fish sauce and garri sprinkled over it.
