Recipe for Nigerian Pancakes for breakfast

Ingredients

2 cups Flour

1/2 teaspoon Baking powder

1/3 cup or 5 tbsp sugar

2 Eggs

1/3 cup Margarine

11/2 cups Milk (3 tablespoons powdered milk)

1/4 teaspoon grated Nutmeg

Some Chopped pepper

Some Chopped Onion

 

Method

  1. Measure out the flour and baking powder and sieve together into a bowl. Grate the nutmeg into the flour.
  2. Melt the margarine.
  3. Beat the egg.
  4. Mix the milk in water.
  5. Mix all the wet ingredients. Add the sugar into the wet mixture to dissolve.
  6. Pour the liquid mixture into the flour and blend well. Add the pepper and onion and mix.
  7. Allow the pancake batter to rest for about 10 minutes.
  8. Fry in small quantities till golden brown.
  9. Serve warm.
