Recipe for Nigerian Pancakes for breakfast
Ingredients
2 cups Flour
1/2 teaspoon Baking powder
1/3 cup or 5 tbsp sugar
2 Eggs
1/3 cup Margarine
11/2 cups Milk (3 tablespoons powdered milk)
1/4 teaspoon grated Nutmeg
Some Chopped pepper
Some Chopped Onion
Method
- Measure out the flour and baking powder and sieve together into a bowl. Grate the nutmeg into the flour.
- Melt the margarine.
- Beat the egg.
- Mix the milk in water.
- Mix all the wet ingredients. Add the sugar into the wet mixture to dissolve.
- Pour the liquid mixture into the flour and blend well. Add the pepper and onion and mix.
- Allow the pancake batter to rest for about 10 minutes.
- Fry in small quantities till golden brown.
- Serve warm.
