2 cups Bambara nut flour (Okpa flour)

1 medium onion (blended or finely chopped)

2 seasoning cubes

Banana leaves, nylon wraps, or aluminium foil (for wrapping)

Prepare the flour
Sieve the Bambara nut flour into a bowl to remove lumps and dirt. -
Mix ingredients
Add palm oil to the flour and mix until evenly combined. Gradually add warm water while stirring to form a smooth, medium-thick paste. -
Season the mixture
Add blended onions, pepper, seasoning cubes, and salt. Stir well until everything is properly mixed. -
Wrap the Okpa
Scoop the mixture into banana leaves, nylon, or foil. Fold tightly to prevent water from entering. -
Cook
Arrange the wraps in a pot, add water to about halfway up the wraps, cover, and cook for 45–60 minutes on medium heat. -
Check doneness
Okpa is ready when it becomes firm. Remove from heat and allow to cool slightly.
