283

Okpa is a popular delicacy from Eastern Nigeria, made from Bambara nut flour. It is nutritious, filling, and perfect for breakfast or lunch.

📝 Ingredients

  • 2 cups Bambara nut flour (Okpa flour)

  • ½ cup palm oil

  • 1 medium onion (blended or finely chopped)

  • 1–2 fresh pepper (to taste)

  • 2 seasoning cubes

  • Salt to taste

  • 3–4 cups warm water

  • Banana leaves, nylon wraps, or aluminium foil (for wrapping)

👩🏽‍🍳 Preparation Steps

  1. Prepare the flour
Sieve the Bambara nut flour into a bowl to remove lumps and dirt.

  2. Mix ingredients
Add palm oil to the flour and mix until evenly combined. Gradually add warm water while stirring to form a smooth, medium-thick paste.

  3. Season the mixture
Add blended onions, pepper, seasoning cubes, and salt. Stir well until everything is properly mixed.

  4. Wrap the Okpa
Scoop the mixture into banana leaves, nylon, or foil. Fold tightly to prevent water from entering.

  5. Cook
Arrange the wraps in a pot, add water to about halfway up the wraps, cover, and cook for 45–60 minutes on medium heat.

  6. Check doneness
Okpa is ready when it becomes firm. Remove from heat and allow to cool slightly.
